The BEST Onion Dip

 

2 TBS Unsalted butter

2 large yellow onions, diced

3 cloves of garlic, minced

2 cups sour cream

½ cup mayonnaise

2 TBS fresh chives, finely chopped

1 TBS fresh Italian parsley, finely chopped

Salt and pepper to taste

1 TBS Blue Ridge Bagel blend spice mix

4 dashes Snake Oil hot sauce, green

Heat the butter over medium high heat in a large sauté pan. Add the onions. Cook 2 minutes until transparent Turn the heat down to medium low and cook for 15-20 minutes until golden brown. Stir regularly. Add the garlic and cook ’til fragrant, about 1 minute. Remove from heat. Move the onions and garlic to a plate and put in the refrigerator to cool. Mix the remaining ingredients in a medium sized bowl. Add the onions and garlic. Mix well. Adjust salt and pepper to taste. Serve with chips or pretzels. Makes 3 cups
