1-16oz jar Half-Way Homemade Massaman Curry
1lb boneless, skinless chicken breasts(cut into bite size pieces)
2 medium Russet potatoes, (cut into bite size cubes)
1 large carrot, peeled, diced
1 red bell pepper, diced
½ c green peas, frozen
2 TBS peanut oil
¼ cup roasted peanuts
2 TBS chopped cilantro
3 c cooked Jasmine rice
Bring a medium saucepan of salted water to a boil. Add potatoes and carrot and cook until almost tender, about 10 minutes. Drain and rinse with cold water. Set aside. Add the peanut oil to a large sauté pan. Heat over medium high heat. Add chicken and cook for 6-8 minutes until done. Add the red bell pepper. Sauté 2 minutes. Add the cooked potato and pour jar of curry into pan. Add the frozen peas. Let warm over medium heat, stirring, until hot. Serve overcooked Jasmine rice and garnish with peanuts and cilantro. Very versatile. Use shrimp, beef, lamb or tofu in place of chicken. Add additional veggies too!
