1 lb cabbage, green, or a combo of green and red ,quarter, core, and cut into thin ribbons
1 TBS salt
½ red onion, diced
1 large carrot, shredded
1/3 cup mayonnaise
2 TBS black mustard
1 TBS honey2 TBS malt vinegar
Salt to taste
Place cabbage in a bowl. Sprinklewith1 TBS. Massage the salt into the cabbage for about 1 minute. You will feel the cabbage start to soften. Let sit for 10 minutes. Place in a colander, rinse and drain well. Mix cabbage with the red onion and carrot. In a separate bowl mix the mayo, mustard, honey and vinegar. Pour over vegetables. Season with salt to taste.
